Onions are the most widely used vegetables around the globe. Did you know the papery skin of the onion peels are full of nutrients?
The outer skin of onion is an excellent source of Vitamin A, C, E and many antioxidants. Recent research confirms that the outer skins of onions provide an exceptionally rich source of plant compounds called flavonoids, especially Quercetin which acts as a powerful antioxidant and anti-inflammatory.
To gain the health benefits of onion peels –
1) Simply add a whole onion, peels and all to make an extra nutritious soup or stew.
2) Cook rice with some onion peels to add extra nutrients.
Discard the skins after the soup has simmered or the rice has cooked.
Remember to give the onions a thorough wash first as like most vegetables they would be covered in pesticides and dirt.
One of the many uses of onion skin is to use it as a mulch in your garden or to create a potassium rich fertiliser to feed your plants.
Onion peel fertiliser – Peels of 2-3 onions soaked in 1 litre of water for 3 days. The prepared infusion of onion peel is rich in Magnesium, calcium, iron, vitamins & Potassium. The strained liquid can then be used as a liquid fertiliser.
