There is nothing more comforting this winter than a warm bowl of pumpkin tomato soup. It’s perfect for this cold weather.
200gm Pumpkin (peeled)
3 medium Tomatoes
1 -2 tbsp Olive oil
2 Garlic cloves (fine chopped)
1 tsp Cumin seeds
Black Pepper crushed plenty
1tbsp lemon juice
Salt per taste
Garnish -Mint leaves
In a heavy base pan add finely chopped tomatoes, pumpkin pieces, water, salt and pepper.
Bring it to boil and simmer covered for 10 minutes or until the vegetables are soft.
Cool a bit and blend to make a smooth puree. Reheat the soup without boiling. Squeeze in a table spoon of lemon juice.
Heat olive oil in a pan, add cumin seed and garlic. Stir and fry till garlic turns golden then remove from flame. Pour this onto the soup mix and stir.
Serve garnish with croutons and mint leaves.
